Some families Christmas morning looks like this: Waking up slow, coffee by a fireplace, smiling over stockings, sprawled amongst a perfectly decorated living room in matching pajamas and leisurely opening gifts followed by a gourmet breakfast.

My family’s Christmas morning goes something like this:

If you’ve met my mother, Sandy Hiipakka, you most likely have zero problem believing this. We affectionately call it, Sandy’s party mode. And to be clear, we love her for it. Our holiday and family gatherings are ALWAYS nothing short of spectacular.

But that means Christmas morning is BUSY and between the celebration, preparation and getting ready for our 25+ guests to arrive, there is next to no time (or appetite) to eat breakfast or snacks. This year I’ll be making a batch of Festive Bulletproof Coffee for the family to keep our bodies fed and appease that “something sweet” my husband craves so much in the morning.

First, a step back. WTF is Bulletproof Coffee? Bulletproof Coffee is a fat burning tool so if you haven’t gotten into it yet, it’s about time. When you wake up in the morning your body is in a fasted state that is primed and ready to burn whatever is put into your body. If you feed it fat, it’ll burn fat. You can read more here.  That being said, Bulletproof Coffee is the perfect consumption for a busy morning – and Christmas morning is just that.

I typically keep my BP coffee simple and basic by blending a cup of brewed coffee with 1 tbs of grass fed butter or ghee and 1 tbs of MCT oil. It’s frothy, creamy and tastes so delicious. The best part? It doesn’t make me feel overly full and keeps me energized for HOURS. Literally. Hours.

But Christmas morning calls for something a little more festive, don’t you think? Hence, this festive AF gingerbread recipe that will add some sweet and savory spice to our morning brew.

Festive Bulletproof Coffee
Serves 1

Ingredients

  • 1 Tbs MCT Oil
  • 1 Tbs Ghee (or Kerrygold grass fed butter)
  • 1 Cup Heavy whipping cream* (you’ll use 1-2 TBS per serving)
  • 1 Tbs Ground ginger
  • 1 Tbs Ground cloves
  • 1 Tbs Stevia
  • 1 Tbs Ground cinnamon

*I’ll whip an entire carton of heavy cream to have on hand for morning coffee for the week, if you don’t want to use an entire carton, only whip up what you think you’ll use.

Directions

  1. To taste, combine a pinch at a time of the ground ginger, cloves, stevia and cinnamon, set aside
  2. Brew a cup of coffee as you normally would
  3. In a blender combine the hot, brewed coffee, MCT Oil and Ghee
  4. Whip the heavy cream until it’s super stiff
  5. Pour the frothy bullet proof coffee in your favorite mug, top of a dollop of whipped cream and sprinkle the gingerbread spice mix on top!

A quick breakdown on the nutritional facts for this recipe:

1 Tbs Heavy whipping cream: 3.3g fat, 0g carbs, 0g protein, 33 calories
1 Tbs MCT oil: 14g fat, 0g carbs, 0g protein, 100 calories
1 Tbs Ghee: 14g fat, 0g carbs, 0g protein, 30 calories
8 fl oz Coffee: 0g fat, 0g carbs, 0g protein, 5 calories

TOTAL per serving: 31.3g fat, 0g carbs, 0g protein, 168 calories

Again, that may seem like a lot of fat (and it is) but it’s not bad, saturated fat! As I mentioned, you need to feed your body fat to burn fat, and this is a quick and enjoyable way to do so. Comment or shoot me an email using this form if you have any questions.
