
There are few things more gratifying than breakfast in bed. Waking up slow, endlessly laying in pajamas, eating pancakes, sipping coffee and binge watching on Netflix. I don’t do it very often, but when I do…I relish every minute.
Unfortunately, sometimes the afternoon and evening hours tend to be followed by guilt of the empty calories of an indulgent breakfast (and lack of productivity).
Enter: Kodiak Power Cakes.
Full disclosure, I was introduced to and provided product by the brand…but all opinions are my own and I’m choosing to share this recipe. Power Cakes have become a staple in my meal planning because they are so dang good, dense and leave me with energy for the entire morning.
Side note – Power Cakes are also really good to make ahead of time and take with you for early morning flights or days when you have to get out the door before the sun comes up. I digress.
With 14g of protein and less than 3g of sugar you’ll get the comfort of a homemade breakfast by ingredients you can feel good about. I recently made the recipe below and hope you enjoy it as much as I did.
Cinnamon Power Pancakes with Peanut Butter Syrup
Makes 2 Pancakes
Ingredients:
Pancakes
1/2 cup Power Protein Kodiak Cake mix
1/2 cup water
1/2 tbsp cinnamon
Peanut Butter Syrup
1 tbsp chia seeds
1/2 cup fruit of choice
1 tbsp PB2
1 tbsp + a tad extra water
Directions:
Grab your book or turn on a movie, sit back, relax and enjoy a peaceful start to your day.
