Chocolate Chia Seed Pudding

Truth be told, I have kind of fallen into a rut with my cooking lately.

Breakfast: 3 eggs, 1/2 avocado
Snack: Greek yogurt, apple, and handful of almonds
Lunch: Chicken breast, handful of steamed broccoli, 1/2 sweet potato
Snack: Protein shake
Dinner: Chicken breast, asparagus, tomato slices

And repeat. Day in. Day out. As my schedule gets busier I sacrifice variety (and sometimes taste) so that I can fuel myself with clean foods in a snap. Meh. However, magically, there is time to explore new clean recipes for dessert. Always! So weird how that happens.

Last week I was introduced to Lemon Chia Seed Pudding at Beatrix and IMMEDIATELY was obsessed. No sooner did I get home and take my coat off was I on the inter-webs looking to find a recipe to recreate this treat. The below is my own take, and I have to say – oh man, is it good. 

Ingredients:

3/4 cup chia seeds
1 1/4 cup almond milk
1 tbsp agave nectar
2 tbsp unsweetened cocoa
1 cup vanilla Greek yogurt
1 tbsp coconut sugar

Directions:

  1. Mix all ingredients together
  2. Refrigerate overnight

  1. Awesome recipe! I’ve made a vanilla version as well, which uses vanilla-flavored unsweetened almond milk, a little vanilla extract, and no cocoa. Equally as good.
