Protein Pancakes

We’ve heard it since we were kids; breakfast is the most important meal of the day. But seriously, who has time for it?! I mean, my typical morning routine typically looks like this:

  • 5am: Alarm goes off. Hit snooze 5 times. Get out of bed, seriously, what are you doing.
  • 5:30am: Workout, kick own ass. So worth the early wake-up call.
  • 6:30am: Check Instagram, Facebook, Twitter, fashion blogs, and mentally plan outfit of the day. I have no clothes and need to shop immediately.
  • 6:45am: Check Zara.com for new arrivals. Basically, act like I have all the time in the world to do nothing. You should be showering right now.
  • 7:15am: Snap back to reality. Shower, get ready, haphazardly do hair and make-up.
  • 8:15am: Realize starvation is setting in per grumbling stomach. Remember that breakfast has yet to be consumed. Sh*t. You are now running late and have next to no time to prepare anything.

Enter: Solution – the perfect Protein Pancake. It takes about 5 minutes to make, and it’s portable so you can eat it while you commute to work.

Ingredients:

  • ¼ C Steel Cut Oats
  • 1 scoop protein powder
  • 2 eggs
  • Splash of almond milk to achieve desired batter like consistency

Directions:

Put all ingredients into Magic Bullet (if you don’t have a MB please get one immediately) and blend until batter forms and oats are smooth. Pour into hot pan and prepare like a typical pancake, flipping once bubbles arise at the surface.

Garnish with fresh fruit or a little almond butter and you are good to go ready to conquer the day! Carpe diem, my friends.

  2. I have frozen pancakes before – it works! When I need breakfast on the go, it often consists of a hard boiled egg (can make them a night or two before), yogurt to bring to the office, or a wholegrain flax English muffin…

  3. I’m definitely going to try this recipe. I have a question for you… Some fitness pros recommend eating within 30 minutes of waking up. Is there any hard and fast rule about working out first thing and then eating? Should you eat a small snack before working out? Any advice or comments would be greatly appreciated

    1. Hi Nikki! There is no hard and fast rule about workout and eating, but many studies have shown that eating within 30 minutes of waking up jump starts the metabolism and provides your body with the energy to have an effective workout. Really, it depends on how your body best responds. For me, when I wake up I’ll have a protein shake before I hit the gym, but if I’m doing cardio I need to do it on an empty stomach. I make sure to have a recovery source (Greek yogurt, egg whites, etc) within 30-40 minutes AFTER I workout so that I recover effectively and my body doesn’t start eating my muscles for fuel.   4. sounds like a silly question, but are the steel cut oats cooking in this recipe? will rolled or instant oats work?

    1. Hey Sheena! Not a silly question at all! You can do either. If you leave the oats raw you have to blend them up a bit to make them coarse and broken down a tad! Thank you for reading and following The Four Percent!
